Apple Salmon
Adapted from the video with Chef Ray Hayes
Ingredients:
Smoked bacon
Red apples
Onions
A splash of white wine
Salmon
1 tablespoon of butter
Method
Cut the bacon in half, stack it and then slice it into thin ribbons and dice the ribbons into pieces. (note: the bacon will be easier to cut if it is frozen or slightly frozen. ) Dice the onions and slice the apples.
Add butter to a saute pan and add the bacon. Cook for a few minutes, then add the onions and apples.
Deglaze the pan with a little white wine and remove from heat.
Place the salmon in an oven proof pan and broil in the oven for 5-6 minutes.
Plate the salmon and pour the sauteed bacon, apples and onions over it before serving.
